July 4th

We went back to the Caissies' for July 4th. Mom, Jay and I started the day off right with King Kone for lunch. Jay had a corn dog, which he immediately regretted.
Peter, Candice, Matt, and some of Josh's friends came up for swimming and barbequeing (creepy picture of Josh in Jen's platform flip-flops omitted here). After dinner, we all went on the boat to watch the fireworks with Mom, Dad, and the Clinghans.

The night was capped off with sparklers and fireworks from the gas station (not a recommended place to buy fireworks). The night almost came to a fiery end when Jay, feeling his lightning-shaped scar prickle, pointed his sparkler at Josh and yelled, "Stupefy!" sending a burning ember directly into Josh's chest. Everyone survived and made it home safely. Thanks, Mom and Dad--everyone had a great time!

We wish we could have been there for fireworks on the lake. We had such a great time when we were there.

For all the rib lovers out there, the receipe:

The Rub:

1 tablespoon each of the following spices: ground cumin, ground corriander, garlic powder, onion powder, paprika, thyme, kosher salt

Fresh ground black pepper to taste

put the rub on the ribs the night before. There should be enough for about two racks of ribs. When it's time to ccok there are two methods you could use. The first is to place the ribs on cookie sheets in your home oven and bake at 275 for 4 hours. The second is to place on the grill using the indirect heat method for 4 hours (low and slow). If you don't know how to indirect cook don't try this method. The ribs will burn if you haven't tried this using indrect before. No Q-sauce until the last 20 minutes. Use your faorite Q-sauce (I make my own and I'm still fooling around with it so no one gets it yet).
